Looking for a yummy snack recipe that’s Atkins-friendly? Then these Low Carb Cheesy Jalapeno Mushroom Bites are perfect! These make a delicious appetizer, too.
I have to tell you, these are HOT ? (but oh-so-very good!) I ate one, and even my lips were burning. Then I had another one. It was so worth it.
These are truly one of the most easiest appetizers or snacks you can whip up in a hurry, like when you have unexpected guests, or are just absolutely starving but don’t want to veer off track. Which I know is all too easy. I’ve started and stopped the Atkins diet so many times now that I’ve lost count!
All you need to do is grab a non-stick baking sheet, spray it with Pam or the like, and line up your mushrooms. Brush with olive oil, stuff with cheese, and add as many jalapenos as you wish on top! Bake at 350F for 15 minutes. See, insanely easy, and even more insanely delicious!
HFLC Diet Low Carb Cheesy Jalapeno Mushroom Bites
Ingredients
12 baby bella mushrooms
1/4 cup extra virgin olive oil
1 cup shredded cheddar cheese
4-5 fresh jalapeños, thinly sliced
Instructions
Preheat oven to 350 degrees F.
Rinse and dry mushrooms
Brush mushrooms with olive oil
Stuff with cheese
Top with jalapenos
Bake for 15 minutes (cheese should be fully melted)
These would be perfect to dip in sour cream (or another low carb dip of your choice)
