Now, before you say anything about how carrots don’t chop up very well in your blender, I have to tell you that you should be using a Vitamix, Ninja, or NutriBullet blender. The generic store-bought blender probably won’t yield creamy results without one, and you’ll be sipping up carrot pieces.
I never thought I’d be a smoothie person. The first smoothie I ever tried was Jamba Juice (many, many years ago), and it was so sweet, I couldn’t believe it was actually healthy. Ever since then, I’ve been hooked, and I love discovering new smoothie recipes!
Carrot Cake Green Smoothie
1 cup chopped or grated unpeeled organic carrots (peeled if not organic)
2 cups fresh baby spinach
1 cup chopped pineapple
1 sliced banana
1/2 cup old-fashioned oats
3 tablespoon raw, unsweetened shredded coconut
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
1 cup almond milk (or regular milk)
1 cup ice
2 tablespoons almond or peanut butter, optional
Place all ingredients in your blender. Blend for 2-3 minutes or until smooth. This will make 2 16 ounce glasses.
Another one of my favorite smoothies using carrots is this Green Detox Smoothie recipe. This is one of the first smoothies I ever made. I love all the health benefits of using apple cider vinegar and carrots together. The apple cider vinegar helps with weight loss and detoxing the system (so perfect when you are first starting a new diet!), and carrots are packed with fiber, helping to keep you fuller, longer (as well as vitamin A, which helps aid in keeping your eyes healthy).
Classic Green Detox Smoothie
2 cups fresh spinach
1 celery stalk
2 tablespoons apple cider vinegar
1/2 cup apple juice
Place all ingredients in your Blender. Blend for 2-3 minutes or until smooth. Add additional apple juice if it is too thick. This will make 2 16 ounce glasses.
