These Chicken Cashew Spinach Wraps are sure to become a new favorite lunch or healthy snack staple! It’s hard for me to eat just one when I make them, but since they are good for you, I don’t feel too guilty eating two!
I mean, just look at some of the ingredients used to make it. Apricots. Cashews. Greek Yogurt. Fresh Spinach Leaves. Spinach Wraps (like Mission or Flatout). Chicken. I mean, aside from the wraps, you could even do little pinwheel versions for appetizers (I think that’s next on my list)!
Chicken Cashew Spinach Wraps
1-1/2 cups cubed cooked chicken (or turkey)
1/4 cup chopped dried apricots
1/4 cup diced celery
1/4 cup chopped cashews, unsalted
1 green onion
1/4 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons plain greek yogurt
1/4 cup mayonnaise
Fresh Spinach Leaves
In a large bowl, combine chicken, apricots, celery, onion, cashews, salt and pepper and mix well. Add yogurt and mayonnaise and mix well.
Place fresh spinach leaves onto a wrap. Spread the chicken mixture onto the wrap and roll up. Enjoy!

This recipe makes 2 large wraps, or 4 small ones.
