Easy Weeknight Dinners Recipe – Cowboy Cornbread Meatloaf

Cowboy Cornbread Meatloaf Recipe

I was watching Food Fighters last night and have to say that this Cowboy Cornbread Meatloaf recipe is inspired by cowboy chef, Kent Rollins! I had a package of ground beef in the fridge that needed to be eaten or destroyed by today, and didn’t feel like doing the run-of-the-mill hamburger patties. I had been contemplating meat loaf with it, but wasn’t quite sure what variation to go with, that is, until last night when I saw Kent! I instantly thought of Cowboy Meat Loaf, but instead of using potatoes or making a casserole, I thought I’d try it with some cornbread stuffing. Boy, was that a good choice! Just smelling it baking in the oven, I knew it had to be good. Especially topped with some Honey Barbecue Sauce! And you know what? I was right! I served it with a side of mashed potatoes and some honey cornbread … pure comfort food! Get the recipe here>>

  1. Why show a recipes if it can’t be printed ??????????????????????????????????
    Sure is stupid………….

  2. William – I feel your pain! But I just changed the format for you, so now you can print, and I hope that you enjoy this recipe as much as we do 🙂 Thanks for letting me know (I am going through every. single. recipe. and copying/pasting the ingredients and instructions into a recipe plugin so it can be printed and it’s taking for. ev. er.) 🙂

  3. What do you do with the cornbread stuffing after you make it? My first thought was the cornbread would be mixed in with the meatloaf. All the recipe says is make the cornbread, but it never tells what to do with it after that.

  4. Hi! Thanks for catching that 🙂 Yes, you combine the stuffing with the ground beef and the seasonings, mixing it all together 🙂 Anything extra can be served as a side if you wish.
