Deviled Quail Eggs
Deviled Quail Eggs
  • 6 Quail eggs
  • 3 tablespoons mayonnaise
  • ½ teaspoon dijon mustard
  • 1-1/2 tablespoon sour cream
  • salt and pepper (1/4 teaspoon each)
  • Dash of smoked paprika (regular is fine if you don't have smoked)
  • Chives (garnish)
  1. Fill a medium pot with cold water and add the eggs. Bring to a boil.
  2. Remove from heat and let sit in pot for 2 minutes
  3. Fill a bowl with cold water and tranfer the eggs to the bowl. Let sit for 1 minute.
  4. Peel eggs to remove the shell, and then slice eggs in half. Remove the egg yolk and place them in a separate bowl.
  5. Stir in the sour cream, mustard and salt and pepper. Add mixture to a piping bag and fill egg egg. Sprinkle paprika on top and garnish with chives.
  6. Serve immediately.
