Deviled Quail Eggs

- 6 Quail eggs
- 3 tablespoons mayonnaise
- ½ teaspoon dijon mustard
- 1-1/2 tablespoon sour cream
- salt and pepper (1/4 teaspoon each)
- Dash of smoked paprika (regular is fine if you don't have smoked)
- Chives (garnish)
- Fill a medium pot with cold water and add the eggs. Bring to a boil.
- Remove from heat and let sit in pot for 2 minutes
- Fill a bowl with cold water and tranfer the eggs to the bowl. Let sit for 1 minute.
- Peel eggs to remove the shell, and then slice eggs in half. Remove the egg yolk and place them in a separate bowl.
- Stir in the sour cream, mustard and salt and pepper. Add mixture to a piping bag and fill egg egg. Sprinkle paprika on top and garnish with chives.
- Serve immediately.
