This simple Garlic and Olive Oil Pasta recipe is better than any box mix you can buy at the store. While the pasta isn’t homemade, it can be, but for simplicities sake, I just use the packaged kind.
This recipe was actually handed down to me from my mom. I remember she used to make it when I was in high school (and that was about 20 years ago … yikes!), but I don’t recall where she got the recipe. She loved to cook and bake, and would teach me the basics that would prove to get me by years later when I moved out on my own. It’s amazing how times can change … here I am now, creating recipes and writing a blog about them!
But back to the recipe.
This is my absolute favorite pasta dish, even more than spaghetti. Sauté the garlic in olive oil, boil the pasta, sprinkle some parsley and red pepper flakes and voìla, pure comfort food. Garlic and Olive Oil Pasta
- 1 lb 8 oz spaghetti noodles
- 2 tbsp olive oil
- 4 garlic cloves, finely chopped
- parsley flakes (dried or fresh)
- red pepper flakes
- Fill a big pot with water and salt generously and allow to boil. Add pasta to boiling water and let boil for about 10 minutes. While the pasta is boiling, add olive oil and garlic to a pan and sauté for 2 minutes. Do not allow garlic to brown. Drain the pasta and return to pot. Pour the garlic and olive oil over the pasta and stir until well mixed (adding more oil if you wish). Sprinkle with parsley and red pepper to your liking.
