Have you seen those Cupcakes In a Jar recipes all over Pinterest?  Well, I have and I thought they were so cute. Basically it’s a cupcake cake, if you will! For this recipe, I kept it easy and just used box cake mix.
What You Need
* Yellow Cake Mix (prepare as instructed on box)
* Small Canning Jars (you can get them here)
* Regular Cupcake Pan
* Non-stick Cooking Spray
Heat your oven to 350 degrees. You will need to put a tablespoon of water into each cupcake pan spot. Spray the jars with cooking spray and then fill them up 3/4 of the way with the mix. Place the jars in the cupcake pan. Â Bake for 20-30 minutes or until your toothpick comes out clean.
While that is baking, you can make your marshmallow icing (easily my favorite part)!
Ingredients
*4 oz of cream cheese
* 1 cup of marshmallow fluff
* 1/4 cup of powder sugar
Combine all ingredients together and whip well until smooth. Then put in fridge to chill until your ready to start icing the cupcakes. Add as much or as little icing to the tops of the cupcakes in a jar as you’d like and top with your favorite decorations. Enjoy!
