Loaded Cowboy French Fries Recipe

Living back in Texas has definitely brought out my Southern roots. Anything named “cowboy” is a hit with me (did you see my Cowboy Cornbread Meatloaf recipe, yet?)  So when I thought of making some cheese fries, I figured I’d kick it up a notch and whip some up cowboy style! I raided the kitchen for some refried black beans, jalapenos, cheeses, sour cream, chives (I didn’t have fresh but I’d definitely suggest using those instead), bacon, and of course, the fries!

Ingredients

Frozen Fries
Refried Black Beans
Cheddar Cheese
Mozzarella Cheese
Sour Cream
Chives (fresh or dried)
Bacon

Cowboy French Fries Ingredients

Directions

Heat oven to 425º Line sheet with foil and spray with cooking spray (or use a casserole dish).  Bake for 20 minutes. Remove from oven and spread the refried beans over the french fries. Top with cheeses (however much you prefer, the more the better for me!), jalapenos, and chopped bacon pieces (crispy or raw, whichever you like).  Place back in oven for 10-15 minutes more.  Once done, top with sour cream and chives (even guacamole if you’d like). Enjoy!
