One thing I missed while on the Atkins diet was nachos, but I came up with these Low Carb Pork Rind Nachos that only have 3 net carbs in them, which are perfect for a snack or even a meal if you please! Here’s how to make them:
1 bag Pork Rinds
1 cup shredded Cheddar Cheese
1 cup shredded Mozzarella Cheese
1/2 lb browned ground beef
1 tablespoon Jalapeños
2 tablespoons Sour Cream
Heat oven to 350ºF. Place foil on a cookie sheet and spray with non-stick cooking spray. Spread chips topped with cheese and ground beef on the pan and place in oven for about 4 minutes or until cheese is melted to your liking. Top with jalapeños and sour cream (and other toppings of your choice such a onions and guacamole). My ingredients equal about 3 net carbs – a great snack or even meal if you are on the Atkins diet 🙂
