I think I just found my spirit animal. It looks just like a drink, is perfect for Summer and I really can’t stop thinking about hot days spent by the pool drinking this. Summer goals anyone? Seriously though, this Passion Fruit beergarita is just what you need this Summer.
I mean this drink has probably the best flavor combination of all time, just think about it for a second. Lime juice, passion fruit juice, some tequila and beer (that can easily be swapped for soda) everything poured into a glass filled to the brims with ice and rimmed with just the perfect amount of salt. I mean you just need to add some guac and chips to feel like vacationing in Mexico, it can’t get any better than that!
While the recipe is one of those that may seem complicated from the outside (passion fruit juice and rimmed glasses may not seem like the easiest thing in the world) this is actually super easy to shake at home.
For the passion fruit juice, I actually used some frozen passion fruit that I got from my local supermarket. You can find it in the frozen ethnic section of your market (at least that’s where the one I bought was). And, I was super excited to use my new EcoDrinkware UN-breakable Stemless Wine Goblets!
Instead of waiting for it to fully thaw I just placed the half frozen chunk in my blender, added some water, lime juice, and the beer and pulsed for a couple of minutes until it was ready, then I just rimmed the glasses with some salt (dip in water, then in salt, yes it’s that easy) and filled to the top with the beergarita. And since the passion fruit is pretty sour it was the perfect pair for the saltiness of the rim.
And finally, if you feel like going the extra mile just decorate your glass with a lemon wedge. Just delicious.
Passion Fruit Beergarita
- 2 oz. Tequila
- 1 12 oz. Beer, cold
- 2 Cups passion fruit juice
- ¼ Cup water
- ¼ Cup lemon juice
- Lemon wedges
- In a blender, pour the tequila, passion fruit juice, water, and lemon juice. Pulse for 2 minutes or until smooth.
- Add the beer and mix for 1 additional minute.
- When ready to serve, rim the glasses with salt and carefully fill them with ice.
- Carefully serve the beergarita and garnish with lemon wedges.
