There are things that are pretty awesome, like the long Summer days, the possibility of heading to the beach, or the lake and the lazy weekends spent outdoors, oh and this peanut butter chicken, this is also awesome and pretty delicious.
I know it sounds completely crazy to add peanut butter to your chicken but oh my gosh this is Thai food meets comfort food and it tastes like if it came from your favorite takeout restaurant, except that it’s actually more packed with flavor and it’s so easy to make it would take the food longer to arrive at your doorstep.
I mean, I’m so excited for this recipe that I can barely contain myself, yes it’s that good!
So what makes this peanut butter chicken so delicious I’m just over the moon? Well, my friends, the seasoning it’s just AMAZING, and everything is probably sitting in your pantry right now, so there’s no need for a trip to the specialty food store. We are using peanut butter, lemon juice, soy sauce, garlic and pepper and if you have some, grated ginger. I mean those are all staples!
Once you have all the deliciousness just rub with the mix of flavor and cook it until well done. The result is this golden brown chicken breast that’s to die for.
I like to serve it with some steamed broccoli and a white rice to keep with the Thai theme, but you can also serve it with some noodles or even with a salad on the side. And while I like to keep the chicken breast whole you can also cut it into tiny squares and use it for a stir fry which is also delicious if you have any leftovers of chicken or rice.
In a bowl mix the peanut butter, lemon juice, soy sauce, garlic, pepper, and ginger.
Rub the chicken breasts with the peanut butter lemon mix.
Grease a big pan or grill and place the chicken breasts.
Cook over medium-high heat for 8 minutes or until well done.
Remove from the fire and serve with rice and steamed broccoli.
