Pineapple Upside Down Cupcakes

If you love pineapple upside down cake, then you are sure to love these cute Pineapple Upside Down Cupcakes! They are so easy to make, and are sure to be a hit at parties, potlucks … and heck, just because! Here’s how to make them!

2 eggs
2/3 cup white sugar
5 Tbsp pineapple juice ( can use juice right from can you get your pineapples out of)
2/3 cup all purpose flour
1 tsp baking powder
1/4 tsp salt

Mix all together and set aside for a moment.

Topping-brown Sugar mixture that goes on the bottom Of the cupcake pan
1/4 cup butter
2/3 cup brown sugar (packed)
1-can pineapple rings

First you grab you cupcake pan and spray a little PAM-
-Then put your pineapple pieces into the bottom of the each cupcake spot (can use crushed pineapple like I did and just include 2 spoonfuls on the bottom of put peices of pineapple into the pan.
-Then MIX your melted butter and brown sugar together.
-Once mixed, heat in microwave for 30 seconds, Take out and stir well.
-Then spoon a table spoon or more if you’d like onto the top of each pineapple.
-Then fill your cupcake pan up with the batter mixture on top of all that.

Pineapple Upside Down Cupcakes Process

-Bake at 350 for 20-25 minutes until your tooth pick comes out clean.

-Let cool and flip over and enjoy!
