Rainbow Cupcakes With Buttercream Frosting

These cute rainbow cupcakes with buttercream frosting are perfect for St. Patrick’s Day, birthdays, and for whenever you’re in the mood to make something fun!  And, they are a lot easier than you think.  For this recipe, I used boxed white cake mix from the store and homemade buttercream frosting.


Prepare cake mix as directed
Divide batter into 4 bowls
Put 5 or more drops of food coloring into each bowl, you may need to do more if you are making yellow cake. Add more coloring if you want the colors more vibrant.
Once you mix up your colorful batter, grab a spoon for each color.
Spoon one spoonful of each color into the cupcake tin.
-I do one to the side of the cupcake, then the other color, Try to make the colors all appear from the top and not to over do the spoonfuls.
Bake at 350 for 15 minutes (this is for 12 cupcakes) – may have to a just bake time if you have more in there.

How To Make Rainbow Cupcakes

While the cupcakes are cooling, go ahead and prepare your frosting.

Buttercream Frosting Ingredients

1 cup of soft (room temperature) butter – can achieve this with hard butter but putting both sticks in microwave for 30 seconds
3 cups of confection sugar
1/2 teaspoon of salt
1 tablespoon of vanilla
5 tablespoons of heavy cream (can do 4 tablespoons of milk too)
1 packet of tropical punch flavored Kool-Aid (can change flavor if you want)

Gradually add in the sugar to the butter mixture and beat well.  Add all other ingredients to the mix, along with 2 teaspoons of Kool-Aid.  Adjust to taste, adding 1 teaspoon of Kool-Aid at a time.  Frost and decorate the cupcakes to your liking and enjoy!
