Cheesecake is a luscious treat that is incredibly easy to customize. However, it can take ample amounts of time along with a mess of bowls. A No Bake Cheesecake is good, but technically it is not a cheesecake and it tends to lack that dense richness that makes every sinfully caloric bite delicious.

Your average slice of plain cheesecake (1/6 of 17 oz cake) has 257 calories and 18 grams of fat. However, these Skinny Mini Cheesecakes will come to your weight-watching rescue. Thanks to Neufchatel cheese, found right next the cream cheese in the refrigerated/dairy section of your grocery store, you will cut the fat and calories along with a few other easy ingredient swaps. The calories will be slashed to just 75 and the fat cut to 4.6 grams per mini cake.


12 cookies of your favorite cookies
8 ounces of Neufchatel Cheese– room temperature
3 tablespoons of Truvia Baking Blend
2 egg whites
1/2 teaspoon vanilla extract
1/2 vanilla bean
1 pinch of salt


Preheat oven to 350 degrees. Place cupcake liners in a muffin pan. Push cookies into the bottom of the liners. Whip cream cheese and Truvia together. Add egg whites, salt, vanilla and the beans scraped from the inside of the bean pod into the cheese mixture and whip for 2-4 minutes. Scrape the mixture from the sides and whip again for 2-4 minutes. Fill the liners about 3-quarters of the way full. Bake for 15-18 minutes. Remove from oven and cool before chilling for at least 20 minutes in the freezer or 1 hour in the refrigerator. Serve as is or top with Cool Whip or fresh fruit.

You can top these with anything you like, but just note you will adjust the calorie/fat content. Fresh fruit is always a hit and will be a bit more figure friendly.
